Since it's pretty much that time of year again, lets talk grillin'. What are some of your favorite recipes? Got a special technique you use to get things just right? What kind of grill do you use? Do you prefer charcoal or gas?

I like grilled portabellos. Then make a portabello and cheese sandwich with roasted red pepper junk. Grilled vegetables are my life during the summer.

Charcoal for me.....
Grilled venison tenderloin is my favorite....No special recipe, just marinate in Allegro wild game marinade for 2 days then grill...
Another favorite that is so easy is to take a large onion, hollow it out (basically just take the core out) and kind of fan the onion open....then I put butter, salt, and pepper in it. Chop up a jalapeno pepper and put the bits down in the hollowed out part of the onion. Wrap this up in aluminum foil and grill to taste. I like for the onion to be a bit firm.....cook it too long and it gets soggy...It's a good side item.

I typically prefer cooking with charcoal, but as much as my grill gets used, it just makes more sense to use propane. It is well seasoned by now, so I don't really miss the charcoal . My grill is a Charmglow (Home Depot brand?) with 4 burners, rotisserie, and side burner. When it comes to technique (and depending on what I'm cooking), I like to use the indirect heat method, or if cooking over a flame, I'll use a low flame. If I'm going to be slow cooking or smoking or using the rotisserie, I'll put a pan of water/beer under the meat, which helps keep it moist. on to the recipes...

I've already mentioned this one, but I'll do it again to put it in this thread... Perfect Steaks:First, I let the steaks marinate over night in a pint of Guinness (this is optional). Then I let them get to room temperature and pour out the Guinness, and cover them in a no salt dry rub mixture I made, and let them sit for about 20-30 minutes. Then they are grilled until they are ~medium, and then I sprinkled them with a bit of salt and add a couple pats of butter. For those interested, the dry rub contained (no ideas on quantities as I added until it tasted right): garlic powder onion powder coriander powder (a little goes a long way) paprika red pepper ground blend of 3 peppercorns chili powder (a little goes a long way) absolutely NO salt... salt dries meat out. you can add it later with better results. I cook the steaks on a medium-low heat, so they are fairly evenly done throughout Grilled BBQ Chicken Quesadillas:Marinate some boneless chicken breasts in a mixture of tequila, fresh lime juice, salt, pepper, garlic powder, cumin, and paprika (and some cayenne pepper if you like it spicier). Let it marinate for at least 30 minutes to an hour. Grill the chicken until it's done, then cut/chop the chicken into small pieces and mix with your favorite BBQ sauce (but not too much, because you want to be able to taste the chicken). Then put some of the chicken and some shredded cheese on a 10" flour tortilla, and then sandwich it with another tortilla. You might also want to brush them down with a touch of butter or oil. Then put the quesadillas back on the grill to get the tortillas crisp. Slice like a pizza and serve with some salsa, sour cream, and an ice cold shot of your favorite tequilla

We don't do too much grillin; as it rarely stops rainin for long enough in the UK however, next time we do get enough dry weather to get the barby out.... i'm gonna steal all your recipes!!! either that or i'm flyin to Canada for some of Eric's steak
