How do you determine which wire is hot and which is not? i've got a feeling that it does'nt matter as long as they're wired in phase or am i wrong?, i've aquired a set that i'd like to try out in my strat , each one has a black wire and a colored wire, i'm assuming the black is ground and the colored is hot but thought i'd check before i get my soldering iron out, any advice appreciated, thanx guys.

Strictly speaking, its entirely up to you. If both pups are from the same manufacturer, the black is probably meant to be the ground connection. The different-coloured wires are meant to help you keep track of which one is which when you connect switches and pots.
